I Was Unprepared

Halloween candy. Ugh.

Truth is, I don’t even like it. Maybe it’s because I have re-trained my taste buds to enjoy better quality food or maybe it’s because I know what’s in the candy and how it impacts my body (headaches & breakouts anyone?).

But there it sat, staring at me.

I knew it wasn't worth it. Sure, I love peanut butter and chocolate together. So Reese’s are a temptation. But truth is, the dark chocolate peanut butter cups from Trader Joe’s and Justin‘s peanut butter cups are better than Reese’s.

I said what I said.

Sugar-Free Cookie Dough Bites

Sugar-Free Cookie Dough Bites

OMGeeze. These are so good. So FRICKin good. Seriously. They even pass the “hubby” test even though they are a “healthier” sweet treat.  Seriously, even when I make a double batch, I can’t keep these in the house!

I have to give credit where credit is due. This recipe comes straight out of the 131 Method Fat Burning recipe collection, no “Erin tweaks” at all. (Well, let’s be honest. I don’t actually count the chocolate chips, I eyeball them). I’ve included notes on what I use in italics, but you don’t have to use the same brand… however, I know sometimes you want to know.

Chocolate Almond Bombs

Chocolate Almond Bombs

Fat bombs.  If you grew up when I did or before, the idea of eating something called a "Fat Bomb" probably scares the bajeebers out of you.  After all... we were taught to eat low fat at all cost. Low fat cheese, meats, soups, even low fat cookies were fine, just keep it low fat.

And then we learn, and we evolve... and we realize that we actually need healthy fats in our diet.  At first, it may be difficult... we've learned how to avoid fats at all cost, so adding them in is not only a mental challenge, but we have to relearn what healthy fats are.

Baked Apples

Baked Apples

These sugar-free baked apples are A-Mazing.  Think apple pie without the crust.  Really.  Of course, if you want you can add a bit of sweetener (I'll make my suggestions in the recipe), but really... you don't need it.  I promise.

This recipe is so easy, you can make it for any size crowd.  Cut it in half... or quadruple it. It's lovely as a decadent dish as part of a fabulous brunch, or serve along side frozen yogurt for a treat!  There are lots of options... so make it yours.

Guilt-Free Cinco de Mayo

Guilt-Free Cinco de Mayo

It’s that time of year again. Cinco de Mayo time!  YUM!!!!

Seeing that I wrote about this last year, you can probably pick up on the fact that I love any excuse to eat Mexican (Tex-Mex) style cuisine. I know the holiday is pretty much an American thing, but whatever. I’ll eat my Fish Tacos and Fresh guac with pride and pleasure.

Oh, and did I mention that I’ll totally do it guilt free? Oh yes I will. Below is my Guilt-Free Cinco de Mayo menu this year.
