Do you have plans for Cinco de Mayo?  Yes, I know this weekend is Saint Patrick’s Day, so you’re probably thinking about Guinness, corned beef, boiled potatoes and whisky. And I can’t blame you. I’m a huge fan of a good Irish Stew or Shepard’s pie. But, you know what I like even more?

Mexican food. All of the Mexican food. Mexican, Tex-Mex, Americanized Mexican, and even that random taco stand down the street. Don’t get me wrong, I love food from other Central American countries as well (My sister makes a delish Nica Salad… I’ll have to convince her to share her recipe), but right now, my brain is thinking about Cinco de Mayo, and Mexican.

Yes, I know Cinco de Mayo is more of an American Holiday… I’ve made that disclaimer both times I’ve shared my recipes previously (You can find them here and here). Unless you’re my husband, you probably don’t make a regular practice of eating these dessert items for breakfast; and to be fair to him, it’s only a cookie or two that occasionally make it on the plate with his eggs. But also to be fair to him, he eats “dessert” at breakfast fat less than most Americans.

What do you call donuts, coffee cakes and other “breakfast” pastries? How about waffles, French toast, or pancakes smothered in sugary syrup? Heck! Even most of the cereals in a typical grocery store have poorer nutritional consistency than some of the desserts mentioned above.

Zucchini Noodles or zoodles have hit the mainstream and are here to stay.  Seriously, dried pasta out of a box just can’t compete (fresh pasta… well, that’s another blog entirely!).

However, the problem is because zoodles are so easy to make, they are also easy to mess up.  I’ve talked to several people who have told me that they don’t like zucchini noodles because they are too soggy.  Yikes!  Soggy noodles don’t sound very good to me either.  Hard pass.

The key when it comes to zucchini noodles is to not overdo it.

Pesto. It’s delicious.  Honestly, I can’t even begin to tell you how much I enjoy pesto.  I mean honestly, it’s easy to make, it’s versatile, and oh… did I mention it’s delicious? 

So I decided to get a bit crazy, and mix things up on you and provide a few of my favorite pesto recipes, and what I like to do with them.  BONUS! These recipes also fall into some of your favorite nutritional lifestyle categories.  Two of them are vegan, one is nut-free and all of them are (did I mention this yet?) delicious! 

For each of these recipes, once they are made store them in a sealed container and refrigerate until ready to use or you can freeze in ziplocks bags to use at a later date. Or, you could just eat it all :)
