Chocolate Almond Bombs

Fat bombs.  If you grew up when I did or before, the idea of eating something called a "Fat Bomb" probably scares the bajeebers out of you.  After all... we were taught to eat low fat at all cost. Low fat cheese, meats, soups, even low fat cookies were fine, just keep it low fat. 

And then we learn, and we evolve... and we realize that we actually need healthy fats in our diet.  At first, it may be difficult... we've learned how to avoid fats at all cost, so adding them in is not only a mental challenge, but we have to relearn what healthy fats are.

If you're looking to increase your healthy fats, you can't get much easier than this recipe.  Okay, I'm exaggerating- you could eat an avocado... but you get the idea.  

This recipe is quick, simple, and delicious.  Once you get the hang of it, you'll find several ways you can adjust this recipe to your tastes and change it up.  Try sprinkling shredded coconut, chopped nuts, or citrus zest on the top before you place in the freezer. Add a bit of natural flavoring (chocolate-raspberry or chocolate-orange anyone?) or use a different nut butter.  The world is your oyster...er... fat bomb.

Disclaimer- I generally don't put sweetener in my batches, but I also like dark chocolate and don't need the sweetener to enjoy this treat.  If you do like something sweeter, play with gradually decreasing the amount until you find the lowest amount for you enjoy. 

Tip #1- you may find that sprinkling the sweetener on the bottom helps you "taste" more sweetness since it ends up outside the chocolate and directly touches the tongue when eating.

Chocolate Almond Bombs

3 Tbsp Extra-Virgin Coconut Oil
3 Tbsp Softened Grass-Fed Butter (I like Kerrygold)
3 Tbsp Organic Cocoa Powder
2 Tbsp Natural Almond Butter (No sugar added, make sure it's only almonds!)
3-4 tsp Stevia (optional, separated)

1. Mix oil, butter, cocoa powder, almond butter, and 2 tsp stevia (optional) in small bowl.
2. If using stevia, in small muffin pan (silicone is easiest) sprinkle remaining stevia in 6 cups. 
3. Divide mixture evenly into 6 slots.
4. Place in freezer for at least 45 minutes.
5. Pop out of muffin sheet, and enjoy!!! (Note: If your muffin sheet is not silicone, you may have to bang it on the counter to loosen the bombs)
6. Leave remaining bombs in the freezer, they do melt relatively quickly.
