Sugar-Free Cookie Dough Bites

OMGeeze. These are so good. So FRICKin good. Seriously. They even pass the “hubby” test even though they are a “healthier” sweet treat.  Seriously, even when I make a double batch, I can’t keep these in the house!

I generally don’t make “healthy” treats since they’re normally not very good and I’d much rather spend the extra treat macros, points, calories (whatever it is that you count) and have the real stuff.  However I have to give credit where credit is due. This recipe comes straight out of the 131 Method Fat Burning recipe collection, no “Erin tweaks” at all and it is FRICKin Amazing. (Well, let’s be honest. I don’t actually count the chocolate chips, I eyeball them). I’ve included notes on what I use in italics, but you don’t have to use the same brand… however, I know sometimes you want to know.

I guess I should also mention where to find some of these ingredients, in case they are new to you. Any of your more “health focused” grocery stores should have most of these items: Whole Foods, Lucky’s, Sprouts, etc. However, I buy most of these items at Thrivemarket.com.  Yes, it’s a membership site, but over the past year I’ve been using it, I’ve found the small fee to be worth it.  I buy everything from deodorant and toothpaste, to coconut butter and miracle rice, to sweeteners, spices, and even vitamins. 131 Method Collagen Cookie Dough Bites

Serves: 6

¼ cup softened butter (I use Kerrygold)
2 scoops (22g) collagen peptides (Unflavored!)
2½ tablespoons Golden Monk Fruit or Swerve, or stevia, to taste (I use Swerve)
2 tablespoons coconut flour (You can buy this in bulk from many grocery stores!)
2 tablespoons almond flour (You can also buy this in bulk, though I use it more often)
½ teaspoon vanilla extract (Get, or make, the real stuff. It’s worth it)
Pinch sea salt
60 sugar-free chocolate chips (I love Lilly’s Dark Chocolate)

  1.  Add all ingredients except chocolate chips to a bowl and stir until combined. (It’ll start getting dough-like)

  2. Stir in the chocolate chips.

  3. Roll into 6 balls and eat immediately or store in the refrigerator.

 Calories: 114     Protein: 4g     Fat: 10g     Carbs: 4g     Fiber: 2.5     Net Carbs: 1.5g

As you can see, if you’re currently on a “low fat” protocol, these cookies probably aren’t for you. However, low carb friends, you’re welcome!
