Turkey Sweet Potato Chili

Sweet potatos and chili.  These are not two things I generally think of going together. However, when one of my clients told me that she was trying a sweet potato chili recipe I was intrigued (yes, she found it on Pintrest).  Even more so, when she told me that her family really liked it. I had to make it.  It was good... it just wasn't (in my opinion) great, so I set out to remedy that situation.  Several batches and small tweaks later, and I've come up with the recipe below.  It's my "perfect" version, but it might not be yours... so feel free to adjust as needed (more peppers, less broth, less garlic... but why?!?). 

Also, when I use my slow cooker, I like to cook a LOT of food even if it's only for me (hey, I have a freezer!), so this is a larger recipe (8 servings).  Now, you can do it in half for a smaller portion, but trust me... it's so good, you'll want more. If you have a big enough slow cooker, just use this recipe.

Turkey Sweet Potato Chili
Makes 8 servings

2 lbs ground turkey
4-8 clove garlic, minced (Okay, you don't have to do that much. But I love garlic, and it's good for you!) 
1 medium white onion, diced
4 peppers, seeds removed and diced (I like to use multi-colored peppers, or even the small sweet peppers... the price is right at Aldi!)
2 large sweet potato, peeled and diced into cubes
28 oz can crushed tomatoes
.5 cup vegtable or chicken broth
6 tsp adobo seasoning (Seriously... get this. You'll fall in love!)
1/2 tsp cinnamon
2 tsp cumin
1 tsp salt
1 tsp pepper
2 Tbsp coconut oil (or extra virgin olive oil)

  1. Heat oil in a large skillet over medium heat. Add garlic and onions and sauté until translucent. Add ground turkey and 2 tsps adobo seasoning. Cook until cooked through.

  2. Place turkey mixture, peppers, sweet potatoes, and tomatoes in slow cooker with broth, remaining 4 tsps adobo seasoning, cinnamon, cumin, salt and pepper.

  3. Mix well.

  4. Cook on high for about 3 hours, low for about 5 hours or until sweet potatoes are tender.

  5. This chili is super yummy, but even yummier with some sliced avocado on top!
