Pumpkin-Pecan Chocolate Chip Cookies

So after a week of amazing pumpkin recipes, I know there would be one or two of you beating down my door if I failed to include my pumpkin-pecan chocolate chip cookie recipe. Yes. It's that good. 

These cookies are obnoxiously addicting- so be careful! I recommend only making them when you have somewhere to take them, or someone to send them home with! After all, you know how I feel about treats.  You should totally eat them... but in moderation. These babies are hard to moderate! (Basically what I'm saying is... um YUM!)

INGREDIENTS

2 cups all-purpose flour
1½ tsp baking powder

1 tsp ground cinnamon
¼ tsp baking soda
¼ tsp ground allspice
1 cup butter, softened
1 cup sugar
1 egg
1 cup canned pumpkin
1 cup chopped pecans
12oz (ish) semi-sweet or dark chocolate chips (or chunks)

DIRECTIONS

1. Preheat oven to 375°F.
2. In a medium bowl stir together flour, baking powder, cinnamon, baking soda, and allspice.  Set aside.
3. In a large mixing bowl beat the butter with an electric mixer on medium to high speed for 30 seconds. Add sugar. Beat until combined, scraping sides of bowl occasionally. Beat in egg until combined.
4. Stir in pumpkin and flour mixture.  Stir in pecans and chocolate chips.
5. Drop dough by rounded spoonfuls 2 inches apart on ungreased cookie sheet. Bake for 10-12 minutes or until bottoms are light brown.  Transfer to a wire rack and let cool.

So here's the deal. You may want to speed the process up and add the dry ingredients to the sugary-butter without mixing them ahead of time.  I hear that, and I endorse that decision in a necessary moment of time-crunch or lack of bowl. However, the one thing I don't endorse is microwaving your butter to soften it up. Just don't do it.  Don't. It really does make a difference if your butter is runny when you are blending it into your batter or if it's soft and creamy. Let the butter warm on the counter- trust me. You'll thank me for it later.

Another thing I'm a huge fan of are the mini-chocolate chips.  Call me crazy (yes, I know) but I love the way they spread out in the cookie.  You may not notice much difference, you may prefer the larger chips or chunks. Either way, it's one of my favorite little changes when adding chocolate chips to recipes.
