Strawberry Season

Strawberry season is upon us.  YAY!!! Maybe it stems back from my childhood when we had strawberries and raspberries planted in our side garden, (or maybe it’s just because they’re freaking delicious!) but strawberry season is one of my favorite seasons of the year.  Fresh, local strawberries are always the best.  Not only because it’s earth happy, but they really do taste better when they’re grown in your vicinity and not from halfway around the world.

So, in appreciation of strawberry season, here are a few of my favorite strawberry recipes!

Appetizer 

Strawberry Bruschetta

This recipe is obnoxiously easy.  Like seriously.  I almost feel bad giving this one away because now you’ll know how easy super simple my fancy recipes really are.  However, it really is too good to share, and if you have any parties during the season, these will be a hit!

Strawberries, sliced
Basil, roughly chopped
Goat Cheese
French Bread
Balsamic Vinegar

  • Slice French Bread into ¾ inch (ish) slices.  Toast on a cookie sheet in the oven (I use the broiler and flip when they are lightly brown, removing when both sides are browned.)

  • Top each pice of bread with sliced straweberries, basil, and goat cheese

  • Drizzle with balsamic vinegar

 

Salad

I have nothing more to say about this.  The picture speaks for itself.  Easy to prepare, deliciousness in your mouth.  You’re welcome.

3-5 Medium Strawberries
.5- 1 oz Goat Cheese
1 tbsp Walnuts
2-3 cups Spinach
4-6oz Grilled or Baked Chicken Breast
Balsamic or Red Wine Vinegar

  • Top a bed of lettuce with strawberries, goat cheese, walnuts, and chicken according to macro needs for the day.  Sprinkle lightly with balsamic or red wine vinegar.

 

Dessert

Strawberries (and optional Cheese)

ALERT! Strawberries are amazazing on their own (that’s right, I said amazazing).  However, if you want to add a little something for a fancy yet simple dessert, a small slice of camembert, a bit of chevre (goat cheese), or a silver of brie is divine! (But please, for the love of all things delicious, don't add sugar!  Savor the sweetness of the strawberries as is!)

  • Enjoy and feel fancy.

 

Shake

Chocolate Covered Strawberry

Meal replacement and protein shakes can often taste like sawdust or the flavor is there, but after researching the ingredients you realize the cons outweigh the pros.  When it comes to Strawberry, it's gotta be Shakeology. This particular shake is bomb dot com, and so ridiculously strawberry, it’s amazing.  Of course, you can always just stick with the strawberry base and enjoy the strawberry flavor straight up, but I’ve got a weak spot for chocolate, so this combo is right my alley.

1 serving Strawberry Shakeology
6-8 oz Chocolate Almond Milk
2-4 oz Water
Ice

  • Place Shakeology, chocolate almond milk, water, and ice in blender.  (Use approximately 10oz of liquid, to taste)  Blend and enjoy!
